So I feel like, you cant get more classic or basic than a banana loaf right ? It was my first bake as an “adult” in my first flat and I remember how proud I was of this simple but super delicious bake. Fast Forward too many years I now love that my little ones are enjoying baking this and truly making a beautiful treat that they can feel proud of.
So what’s the kick ? We have added our favourite Pumpkin Pie Spice to this simple recipe and we think its delicious !

We love a cosy Sunday tucking into this with a delicious cold cup of milk or a warm cuppa !
So here’s the super simple recipe:
Ingredients:
140g Butter (a little to grease your tin)
2 Large Eggs
140g Self Raising Flour
1tsp Baking Powder
1TBS Pumpkin Pie Spice (gp spices)
2 Ripe bananas
1 Extra banana (bottom of tin)
Method:
There really is no need to get messy with this one, you can mostly do it in one bowl.
- Pre heat your oven to 180C/ 160C Fan/ gas 4
- Butter your 2 pound Loaf Tin and line the base with a grease-proof paper
- Mix your butter and sugar until its a bit fluffy (you can definitely hand whisk this) add your eggs and flour a little at a time until all has been added.
- Now add your baking powder and pumpkin pie spice and fold in your two mashed bananas
- Take your remaining banana and slice it down the middle and place it middle side down on your grease-proof paper add all the batter on top and allow to cook for around 50 minutes, keep your eye on your bake as every oven can vary.
- Carefully turn your loaf onto a plate, and slowly peal back the paper, you may need to be extra careful here as the banana at the bottom is a beautifully caramelized and makes for a pretty effect.
