Bezelya !

This super easy meal and makes for a delicious meal. As it is so quick I would suggest its a great mid-week meal for the weekly planner. The ingredients needed are basic and so the meal really is a low cost, nutritious crowd pleaser. I find that kids and adults alike enjoy it and whilst it does require two pots its so worth it.


Ingredients List:


For the peas:


750g Petit Pois Peas

1 White Onion

2 Tbsp Extra Virgin olive oil

3/4 Tube Tomato Puree

3/4 Tbsp Salt

Chicken or Lamb Pieces


For the Rice


500g Broken Vermicelli

300g Pudding Rice

4 Tbsp Sunflower Oil

Salt to taste



Method:


Starting with the pea's as it will take longer to cook;


We promised you a quick recipe and now you will see why, throw into your pot, your chopped onion, the frozen pea's and meat of choice, allow the pea's to thaw, once the water from the frozen pea's has mostly evaporated add in your olive oil, salt and pepper. Throw in the tomato puree and cover in boiling water. Allow this to gently cook for around an hour, or however long it takes for the meat to be fully cooked.


Please check every 20 minutes or so and top up with a little boiling water from the kettle if needed. Avoid adding too much, you want a lovely consistency with the sauce, not too watery and not too thick.


Now for the rice:


Begin in a smaller pot, ensuring its a non stick pan, add in the sunflower oil and your broken Vermicelli, you want to stand over this pot on a low heat and allow to gently brown the broken pasta pieces, the colour you are looking for is a golden brown.


Once you are happy with the colour of the pasta, add in your pudding rice and salt to taste, give it a good mix.


Add boiling water and cover the rice and pasta allowing around 1 cm of boiling water above the level of the rice. Now cook this for about 5 minutes on a medium/high heat, then once the water has reduced give it one good mix and close the lid and allow to cook on a low heat for another 15/20 minutes.


Check the rice is cooked and turn off the heat.


Once your peas are cooked serve, filling half your place with the rice and half with the bezelya.


Now all that's left is to sit back and enjoy !
