Finely chop your apples, add the butter, brown sugar, spice mix, and heat on a pan until golden and gooey
Lay your puff pastry on your surface and divide evenly, with a top and bottom for each pie
Fill 1 out of two of each pastry piece with the delicious apple filling
Place the plain pastry onto the side with the filling on and seal with a fork
Brush with an egg white wash and sprinkle on your caster sugar
Make three slits in the pastry
Place in the freezer for about 10 minutes
Fry your apple pies until golden brown
