Potato Tagine - A little Libyan go to recipe

A super simple, go to recipe loved by everyone.


This super simple one tray tagine is so easy to make, ill be surprised if it doesn't turn into one of your weekly / fortnightly meals.


A rewarding little gem, that require minimum effort but with a delicious cucumber and tomato side salad can go a long way. Make sure you have some crispy french loaf or pitta bread to hand to dunk into the sauce too !


This Libyan dish is definitely one of my favorite meals, so here goes, watch how just a few ingredients can make this delicious meal.




Ingredients:


1 Finely chopped onion

1 kg baby potatoes (any other can be used but baby potatoes give the best results)

Lamb pieces (preferably on the bone or chicken)

1 TBSP Salt

2 TBSP tomato puree

sprinkle of cinnamon

Olive Oil

Hot water from the kettle


Method


1. In your tray, place your chopped onion add the salt and 10 Spice Mix, Libyan Hararat and salt, with some gloves on (or your hand, whatever you feel comfortable with) squeeze the onion mixing in the spices until the onion releases a good amount of juice and it becomes a spicey mix.


2. Take you meat of choice and marinade it with the onion and the spice mix and place in the tray


3. Wash, peel and slice your potatoes, add the tomato puree to the onion that is left and marinade the potatoes and lay in the tray


4. Add hot water (just enough to cover the potato and meat)


5. Drizzle your tray with plenty of olive oil.


6.Place in the oven and cook for 45 minutes at 220 degree's. Check the water and if required add some hot water and allow to cook for a further 20 minutes.


7. Check the meat is cooked and if so go ahead and serve, delicious with fresh crispy dipping bread a side refreshing cucumber and tomato salad.
